Ambrosia (Dot Lawley)

  • 1 can (11 oz.) mandarin oranges, drained
  • 1 can (13 oz.) pineapple chunks, drained
  • 1 cup flaked coconut
  • 1 cup miniature marshmallows
  • 1 cup sour cream (optional)
  • ½ cup halved maraschino cherries.

    Mix all ingredients. Chill overnight. Fill orange sherbet ring, if desired

    Orange Sherbet Ring (Dot Lawley)

  • 2 pkg. (3 oz.) orange Jell-O
  • 2 cups boiling liquid, water or juice
  • 1 pt. orange sherbet (not orange ice)
  • 1 can (11 oz.) mandarin oranges, drained

    Dissolve Jell-O in boiling liquid. Immediately add sherbet and stir until melted. Allow to thicken slightly, then add oranges. Pour into 1½-quart (6-cups) ring- mold and chill until firm.

    Note: I find this doesn't quite fill my 1½-quart mold. You may want to add another can of oranges or another pkg. of Jell-O with 1 more cup of liquid and more sherbet. I have also used a pkg. of unflavored gelatin with 1 cup of orange juice
