Banana Bran Muffins
1 large egg
½ cup oat bran or unprocessed wheat bran (millers bran)
¾ cup brown sugar
1 1/3 cup mashed banana (3 large, 4 medium bananas)
2 tsp. baking powder
½ tsp. baking soda
½ cup raisins or chopped nuts
1 tsp. ground cinnamon
1/3 cup vegetable oil
¼ tsp. salt
¼ tsp. vanilla
¾ cup all purpose flour
¾ cup whole wheat flour
Beat with a wooden spoon, egg & sugar in a medium size bowl until smooth. Add bananas, raisins (or nuts), oil and vanilla. Beat until blended then let stand one minute or so. Thoroughly mix flours, bran, baking powder, baking soda, cinnamon and salt in a large bowl. Add banana mixture and fold in with spatula just until dry ingredients are moistened. Spoon into 12 greased muffin cups. Bake 20 to 25 minutes in 375-degree oven until brown and springy to the touch. Remove from pans and cool
