Bing Cherry Jello Salad
2 3-oz. pkg. of cherry Jell-O
1 cup pineapple juice
1 cup of water
1 lb. can of bing cherries
1 cup of pecans
1 cup of juice from a can of bing cherries
1 cup of red sweet wine (Cherry wine was very good; also Mogen David grape)
Add water to liquid from cherries to make 1 cupful. Use that plus the other cup of water, bring to a boil and dissolve Jell-O in boiling liquid. Add pineapple juice and wine, chill until Jell-O is almost ready to start thickening. Add nuts and cherries and chill well. Can be used in a mold, or in a flat Pyrex dish and cut into squares. Optional: Put a pecan half into cherry before adding to Jell-O instead of randomly mixing pecans.
