Blueberry CoffeeCake
Mix thoroughly:
¾ cup sugar
¼ cup soft shortening
1 egg
Stir in:
½ cup milk
Sift together:
2 cups flour
½ tsp. salt
2 tsp. baking powder
Add to above mixture, stir well, then carefully fold into batter 2 cups well-drained blueberries. Spread batter in greased and floured 9" square pan and sprinkle with topping made from:
½ cup sugar
1/3 cup sifted flour
½ tsp. cinnamon
¼ cup soft butter
Bake 45 to 50 minutes at 375-degrees.
