Bran Muffins

  • 7 cups raisin bran (15 oz. box)
  • 2 tsp. salt
  • 3 cups sugar
  • 4 eggs
  • 5 cups flour
  • 1 cup oil
  • 5 tsp. baking soda
  • 1 quart buttermilk

    Mix together raisin bran, sugar, flour, soda and salt. Add well-beaten eggs, oil, & buttermilk; mix well. Fill greased muffin pans half full and bake in 375-degree oven for 20 to 25 minutes. Refrigerate extra batter in tightly covered container for up to six weeks, using as desired. Makes approximately 3½ dozen muffins.
