Can Do Cookie Dough
2 eggs
3½ cups flour
2/3 cup shortening
2 tsp. baking powder
2/3 cup margarine
1 tsp. salt
1½ cups sugar
2 tsp. vanilla
Heat oven to 375-degrees. Beat eggs slightly in large mixing bowl. Add remaining ingredients, blend on low speed about 30 seconds. Mix on medium speed until ingredients are well blended and gather together, about 3 minutes. Form dough into a ball with hands (if dough does not hold together, add 1 or 2 Tbs. cream). Do one of the following:
Drop by tsp. onto greased cookie sheet, flatten with glass dipped in sugar. Sprinkle with cinnamon or add a walnut half in the center of cookie. Bake 8 to 10 minutes, checking often.
To one-half of the dough, add 2 ounces unsweetened chocolate, melted and cooled, 1 pkg. (6 oz.) chocolate chips, ¼ cup sugar and ¼ cup water, mix thoroughly. Drop by tsp. onto ungreased sheets and bake 10 to 12 minutes.
Add either coconut or raisins and drop by tsp. onto greased cookie sheets, bake about 12 minutes.
Roll ½ of the dough into balls, then roll in mixture of 2 tsp. cinnamon, 2 Tbs. sugar and 1/3 cup finely chopped nuts. Bake 8 to 10 minutes on ungreased sheets.
Roll ½ of the dough into 1-inch balls, then roll in 1 egg white, slightly beaten, then in finely chopped nuts. Place on ungreased cookie sheets, make indent with thumb in center of each ball. Bake 8 to 10 minutes. When cool, fill indent with small amount of jam or jelly, or gumdrop.
