Cheesy Chicken Casserole (Ellen)

  • 1 lb. Prince rotini
  • ½ cup milk
  • 1 (10-oz.) pkg. frozen peas
  • 1 (10 oz.) can cheddar cheese soup
  • 2 chicken breasts, boned & cubed
  • 2 cups American cheese shredded (Ellen uses velveeta cheese)
  • 2 medium onions, chopped
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 1 (8-oz.) can sliced mushrooms, drained (or fresh, sliced & sautéed).
  • 2 Tbs. butter or margarine

    Cook rotini according to package directions. Drain. Sauté cubed chicken, onions & mushrooms in butter until chicken is tender. Combine peas, rotini, cheese soup, milk and 1 cup American cheese. Add to chicken mixture. Mix. Pour into a 3-quart casserole. Top with remaining cheese. Bake at 350-degrees for 20 to 25 minutes. 6 – 8 servings.
