CHEX CARAMEL CORN

  • 4½ cups Corn Chex or Rice Chex cereal
  • 4 cups popped Pop-Secret microwave popcorn (from 3.5-oz bag )
  • ½ cup honey-roasted peanuts, if desired
  • ¼ cup butter or margarine
  • 1/3 cup packed brown sugar
  • 2 Tbs light corn syrup
  • ¼ tsp vanilla

    Microwave Directions: Mix cereal, popcorn, and peanuts in large microwavable bowl. In a medium microwavable bowl, microwave butter, brown sugar, corn syrup and vanilla uncovered on High about 2 min. or until mixture is boiling, stirring after 1 min. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on high 5 to 6 min. stirring and scraping bowl after every min. Spread on waxed paper to cool, about 15 min., stirring occasionally to break it up. Store in airtight container.
    Oven Directions: Heat oven to 250 degrees F. In ungreased large roasting pan, mix cereal, popcorn and peanuts. In 2-quart saucepan, heat butter, brown sugar, corn syrup and vanilla to boiling over medium heat, stirring frequently. Pour over cereal mixture, stirring until evenly coated. Bake 45 min. stirring every 15 min. Spread on wax paper to cool, about 15 min. stirring occasionally to break it up. Store in airtight container
