Chocolate Cream Cheese Cupcakes

Batter:
  • cups flour
  • 2 cups sugar
  • ½ cup cocoa
  • 2 cups water
  • 2/3 cups oil
  • 1 tsp. salt
  • 2 tsp. vanilla2
  • 2 tsp. baking soda
  • 2 Tbs. Vinegar

    Filling:
  • 8 oz. cream cheese
  • 1 egg
  • 1/3 cup sugar
  • ¼ tsp. salt
  • 6 oz. chocolate chips
    Note: I prefer to make half again as much on the filling.

    Batter: Mix ingredients in order given, beat until smooth. Put 1 Tbs. of batter in each midget cupcake paper and top with scant tsp. of filling. Bake at 350-degrees for 20 to 25 minutes. (this makes 60 to 75 midget cupcakes, freezes well for storage.)

    Filling: Beat all ingredients except chocolate chips until very smooth. You can either stir bits into batter, or drop 4 or 5 bits into cream cheese in cupcake.
