Cinnamon Streusel Cake (Jeanne)

  • 1 Pkg. regular yellow cake mix
  • 2/3 cup oil
  • 4 eggs
  • 1 cup buttermilk
  • ¼ cup sugar
  • 2/3 cup firmly packed brown sugar
  • 4 tsp. ground cinnamon
  • ¾ cup sifted powdered sugar
  • ½ Tbs. lemon juice

    Combine cake mix, oil, eggs, butter, milk & ¼ cup of sugar in a large bowl. Beat 2 minutes at medium speed in electric mixer. Pour half of batter into a greased & floured 9 X 13" pan. Combine brown sugar & cinnamon & divide in half. Sprinkle half over batter. Top with remaining batter – spread evenly then top with remaining cinnamon mixture. Run knife through mixture several times and swirl batter. Bake 325-degrees for 40 minutes. Combine powdered sugar & lemon juice. Pour over cake while still warm. Cut into squares.
