Coconut Nut Filling And Frosting
1 cup evaporated milk
1 cup sugar
1 egg yolks slightly beaten
½ cup butter or margarine
3 tsp. vanilla
1 cup coconut
½ cup nuts (pecans or walnuts)
Combine milk, sugar, egg yolks, and butter in a saucepan. Cook and stir over medium heat until mixture thickens (takes about 12 minutes). Remove from heat, stir in vanilla, coconut and nuts. Cool until spreading consistency, beating occasionally. Spread between cake layers and on top of cake. (Excellent for chocolate cake.)
