CRANBERRY ALMOND BREAD

  • 2 cups of flour
  • ½ cup of sugar
  • 2 tsp of baking powder
  • 1 tsp of salt
  • 1 egg
  • ½ cup of milk
  • ½ cup of butter, melted
  • 2 tsps of almond extract
  • 1½ cups of fresh or frozen cranberries
  • 1 Tbs of sugar
  • ½ cup of sliced almonds

    Heat the oven to 375 degrees. Grease an 8½ X 4½ X 2½-inch loaf pan. Combine flour, sugar, baking powder & salt in a medium mixing bowl. Combine egg, milk, butter & almond extract in a separate mixing bowl. Add to dry ingredients, mixing just until moist. Stir in cranberries. Spread batter in the loaf pan. Sprinkle with sugar & almonds. Bake for 45 minutes. Reduce heat to 350 degrees. Bake for 30 minutes or until a toothpick inserted into the center of the loaf comes out clean. Makes one loaf.
