Cream Cheese Pie

  • 12 oz. cream cheese
  • 2 tsp. vanilla
  • 2 eggs
  • 1 tsp. lemon juice (more if desired)
  • ½ cup + 1 Tbs. sugar

    Combine all ingredients, whip until light and fluffy. Pour into graham cracker crust and bake at 350-degrees for 15 to 20 minutes. Remove from oven and cool 5 minutes. Pour topping over pie and bake 10 minutes longer. Chill at least 5 hours before serving.

    TOPPING: 1 cup sour cream and 2 Tbs. sugar blended well.

    CRUST: 1 cup graham cracker crumbs mixed with 4 Tbs. melted butter. Pat into pie pan (do not bake first).
