Date Nut Pinwheels

  • 1 lb. dates, pitted and chopped
  • ½ cup water
  • ½ cup white sugar
  • ½ cup butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • ½ tsp. vanilla
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 2 cups flour
  • 1 cup chopped walnuts

    Combine dates, & ½ cup water & white sugar in small saucepan, cook over medium heat stirring constantly until thick, about 3 or 4 minutes. Cool completely. Thoroughly cream butter, sugars, egg and vanilla. Add dry ingredients, stir until smooth and chill dough. Add chopped nuts to date mixture. Take ½ of dough, roll on floured surface until it is about ¼ inch thick. Spread ½ of date mixture evenly over dough, roll jellyroll fashion. Repeat with remaining dough. Wrap rolls well in waxed paper, chill thoroughly. Cut into ¼ inch thick slices and bake on lightly greased cookie sheets in 400-degree oven for 8 to 10 minutes.
