Grasshopper Pie
½ lb. marshmallows
3 Tbs. Crème de menthe
1 cup milk
1½ Tbs. Crème de cacao
1 1/3 cups heavy whipping cream
Melt marshmallows with milk in a double boiler. Put aside to cool. Whip heavy cream in bowl with a wire whip until cream stands in peaks. To cooled marshmallow mixture, add Crème de menthe and Crème de cacao, blending well. Very carefully add this to whipped cream, folding in using a wire whip, until well blended. (I like to add green food coloring at this point, just a few drops to give it a nice green color.) Pour into cookie crust, chill thoroughly before serving.
Chocolate Cookie Crust: Add 4 Tbs. Melted butter to 2 cups finely ground Oreo chocolate cookies (use frosting & all), mix well and pat into pie pan that is well buttered. (This should be made in advance and frozen before using as above no baking necessary.)
