Haluski, Cabbage And Noodles
1 large head green cabbage
1 Tbs. salt
1 stick unsalted butter
1 medium onion, thinly sliced
12 oz. egg noodles, medium wide
freshly ground black pepper
Cut cabbage into ¼" slices. Place in large bowl and sprinkle with salt. Cover with a dinner plate to weight down and refrigerate overnight. When ready to cook, drain in a colander and squeeze dry. In large pan, melt butter and add onion and cabbage. Sauté until mixture is golden brown and very soft. Cook noodles according to package directions and drain. Toss noodles with cabbage mixture, add lots of freshly ground pepper. Serve with fresh rye bread with caraway seeds. Makes four servings.
