Herbed Dumplings

  • 1 6-inch piece day-old French bread
  • 2 Tbs. chopped celery leaves
  • 1 Tbs. chopped chives
  • ¼ tsp. salt
  • 1/8 tsp. freshly ground pepper
  • 1/3 cup milk
  • 1 large egg yolk
  • 1 Tbs. butter

    Pulse bread in a food processor until large crumbs form. Toss in a bowl with celery leaves, chives, salt & pepper. Whisk together milk & egg yolk, then add to bread mixture. Shape into 16 small dumplings. Melt butter in a large nonstick skillet over medium-high heat. Sauté dumplings until heated through. 5 minutes. Makes 16 dumplings.
