Kifles
DOUGH:
1 lb. butter
12 oz. cream cheese
4 egg yolks
4 cup flour
Let butter and cream cheese soften to room temperature, mix well with egg yolks and flour and knead until smooth and soft. Wrap in waxed paper and chill 3 hours or longer. On board dusted with a mixture of confectioner's sugar and flour, roll dough to thickness of cutout cookies, and cut in about 3" squares. Spread with nut filling, or drop a small amount in center of dough. Roll from corner to corner, like a crescent. Place on lightly greased baking sheet, bake in 350-degree oven for 15 to 20 minutes. If desired, dust lightly with confectioner's sugar before serving.
FILLING:
4 egg whites, beaten stiff
1 lb. confectioners sugar
3½ cups walnut meats, ground
Beat egg whites until stiff, slowly fold in sugar and finely ground walnuts. Or, use apricot jam or lakvar.
