Lemon Squares
FOR CRUST: Take 2 cups flour, ½ cup 4X sugar (sifted), 1 cup soft butter. Mix well then press dough onto bottom of buttered baking dish, about 9 X 11". (9 X 13" can be used but smaller is better). Bake at 350-degrees for 20 to 25 minutes. Remove from oven.
FOR FILLING: Put into blender: 4 eggs, 1/3 cup fresh lemon juice, and 1 and ¾ cups sugar; beat until frothy. Blend in 1/3 cup flour with ½ tsp. baking powder. Pour mixture over baked crust bake at 350-degrees for 20 to 25 minutes. When cool cut into squares.
