Lime Gelatin Salad

  • 1 6-oz. lime Jell-O
  • 1 cup boiling water
  • 8 oz. cream cheese
  • ½ tsp. vanilla
  • 15-oz. can drained Mandarin oranges
  • 8 oz. can drained crushed pineapple
  • 1 cup lemon lime soda
  • ½ cup chopped pecans
  • 1 8-oz. cool whip

    Dissolve Jell-O in boiling water. In mixing bowl, cream cheese until fluffy. Stir in gelatin mixture & beat until smooth. Stir in vanilla, oranges, pineapple, soda & pecans. Chill until mixture mounds slightly when dropped from a spoon. Fold in ¾ of cool whip. Pour into a 9 X 13" dish. Refrigerate 3 to 4 hours until firm. Cut into squares. Garnish with remaining topping. Yield 16 to 20 servings.
