Meatloaf
½ cup of finely chopped onion
1 cup of soft bread crumbs
1 tsp. of salt
½ cup milk
1 egg
½ tsp. of pepper
2 lb. of ground meat (80% lean beef or ½ pork & ½ beef)
optional: all or any:
¼ cup of ketchup
1 Tbs. of spicy mustard
1 Tbs. of dried parsley flakes
Mix all ingredients well. Pack gently into a loaf pan or shape into a 10 X 4" loaf on a rimmed baking pan. Bake in a 350-degree oven 75 to 90 minutes or until medium doneness. (Internal color isn't an accurate guide since onions and other veggies often used in meatloaf have natural nitrates that keep meat pink even when it is safely cooked). Let loaf rest 10 minutes before slicing. Refrigerate well-wrapped leftovers or freeze.
