Minestrone Soup
2 Tsp. olive oil.
2 Tsp. butter.
1¼ cup chopped carrots.
2½ cup chopped celery.
1½ cup chopped onion.
1 clove garlic crushed.
1 16-oz. can great northern beans rinsed and drained.
1 16-oz. can diced tomatoes.
4 qt. chicken broth
2 cups diced red skin potatoes.
1½ tsp. salt.
1 pkg. frozen frenched string beans
¼ cup chopped parsley (can use dried)
1 Tbs. chopped basil
½ to ¾ lb. smoked turkey, diced.
½ tsp. oregano.
2 cup shredded cabbage
½ cup elbow macaroni.
1 lb. zucchini sliced.
Optional: grated Parmesan cheese
Heat the oil and butter in a pot. Add carrots, celery, onion, & garlic; sauté 5 min. Add tomatoes, bring to boil then simmer 10 min.
Meanwhile: In a very large stockpot, combine broth, potatoes & northern beans. Bring to boil then cook till just tender. Add simmering veggies. Add string beans, parsley, basil, oregano, & turkey, bring to boil & simmer 20 min. Add macaroni, zucchini, & cabbage; simmer 15 minutes or till macaroni is cooked. Garnish with parmesan cheese
