Mini Corn Muffins

1 cup all purpose flour
1 cup yellow cornmeal
2 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
1 beaten egg
1 cup buttermilk
3 tablespoons cooking oil

Stir together flour, cornmeal, sugar, baking powder, and salt. Blend egg, buttermilk, and oil. Add to dry mixture and mix until just smooth. Fill greased mini muffin pans ¾ full. Bake at 425 degrees for 20-25 minutes. Makes about 45 mini muffins.
