Pasta Fagiolo (Macaroni And Beans)

  1. 1 lb. dried northern beans
  2. leftover ham bone, ham, & broth
  3. 1 large onion
  4. 8 oz. can of tomato sauce
  5. 1 cup macaroni
  6. garlic & pepper to taste

    Soak beans several hours; drain and sort; add water to cover, ham bone, about one-half cup of jelly that forms when baking the ham, tomato sauce, chopped onion, and seasonings. (Salt is not usually required). Simmer until beans are tender, at least one hour. Cook macaroni in separate pot; drain and add to soup mixture along with chunks of leftover ham. More tomato sauce can be added to taste. Avoid adding too much water and ending with a watery mixture. Let mixture stand after adding macaroni so flavors are absorbed.
