Peanut Brittle

  • ½ cup water
  • 2 cups of sugar
  • 1 cup of white corn syrup
  • 2 cups of raw peanuts
  • 2 Tbs. butter
  • 2 tsp. baking soda
  • 1 tsp. vanilla

    Bring water to boil, then add sugar, corn syrup & a dash of salt. Stir until dissolved and boil until it will spin a thread. Now add the raw peanuts & cook slowly over low heat until it turns a golden brown (almost same stage as above). Remove from heat & add butter, baking soda, & vanilla. Stir quickly. Spread on two large cookie sheets that have been well-buttered (have these ready before you begin making the candy. This gets hard very fast so you have to work quickly). Place in cold area until candy is brittle, remove from pan and break into pieces.
