Peanut Rolls

  • 2 lb. 4X (confectioners) sugar
  • 4 oz. flaked coconut
  • ½ lb. butter/margarine
  • unsweetened chocolate for coating
  • 1½ tsp. vanilla
  • crushed peanuts
  • 4 oz. cream cheese

    Thoroughly cream butter or margarine and cream cheese with vanilla. Add coconut and stir well. Add sugar gradually, and stir until smooth. Make into small balls and chill until firm. Coat or dip in chocolate, then roll in crushed peanuts. The above amount will use about 8 oz. of chocolate and about the same amount of peanuts.
