Penuche

  • ¾ cup evaporated milk
  • 1 lb. brown sugar
  • 1 Tbs. butter
  • 1 Tbs. light corn syrup
  • 1/8 tsp. salt
  • 2/3 cup chopped pecans
  • 1 tsp. vanilla

    Combine milk, sugar corn syrup, butter and salt in saucepan. Stir over medium heat until sugar is dissolved & comes to a boil. Cook until mixture reaches soft-ball stage. Cool without stirring until lukewarm. Add vanilla and nuts and beat until thickened. Pour into buttered 8 X 8" pan, chill and cut into squares.
