Pineapple Macaroon Cookies

  • 1 8-oz. can crushed pineapple
  • 1½ cup flour
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • ¾ cup margarine
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 2 cups corn flakes
  • ¼ cup finely chopped nuts

    Drain pineapple, reserve syrup. Sift flour and soda together. Cream butter and sugars until light and fluffy, add flour mixture, vanilla and 1 Tbs. of syrup from pineapple. Stir in corn flakes. Shape into balls, place on cookie sheet. Make indentation in each one with thumb. Fill with well-drained pineapple, sprinkle with nuts. Bake in 350-degree oven about 20 minutes.
