Pizelles

  • 3 eggs
  • 1 cup sugar
  • 1 tsp. vanilla (or lemon)
  • anise (seeds or flavoring)
  • 1 stick butter
  • 8 Tbs. crisco
  • 1 cup milk
  • 2 cups flour

    Beat eggs & sugar until fluffy. Add vanilla & anise. Melt butter & crisco separately. Add milk with melted butter & crisco. Add this & flour alternately to egg mixture. Batter should be slightly thick (not runny). Cook (in Pizelle maker) about 1 or 2 minutes till golden brown. (Crisco makes Pizelles crispy. You can decrease the amount and supplement with margarine.)
