Potato Pancakes
4 medium size potatoes
1 small onion & 1 egg
approximately 1 Tbs. flour
½ tsp. salt
Peel potatoes and grate on medium side of grater (or use a food processor or blender to grate potatoes fine), grate the onion as well. If potatoes have a lot of liquid, spoon off and discard as much liquid as possible before grating in onion. Beat in egg, flour and salt. Drop batter by generous Tbs. into hot skillet, which has about one Tbs. of shortening in it. Fry over medium to hot heat about 3 to 4 minutes on a side, being careful not to burn them. The above amount will make about 10 small pancakes. (More shortening can be used to almost deep-fry the pancakes (I prefer to use small amounts of shortening at a time, adding when necessary.)
