Potato Salad

  • ½cup mayonnaise
  • 2 ribs celery, minced
  • 1 medium onion, minced
  • 2 Tbs. sweet pickle relish
  • ¼ cup bottled French dressing
  • salt & pepper to taste
  • 6 medium potatoes, any variety (red preferred)

    Scrub potatoes & remove eyes & blemishes. Place in a pot, cover with water, & add 1 tsp. salt. Bring to a boil & cook until tender but not too soft. Drain, cool, remove skins & dice potatoes. Place in a bowl, add remaining ingredients, stir & refrigerate until chilled. Amounts In recipe can be adjusted to taste.
