Quick Cinnamon CoffeeCake

  • 1½ cups sugar
  • 1 Tbs. lemon juice
  • ½ cup chopped nuts
  • 2 cups flour
  • 1 Tbs. cinnamon
  • ½ tsp. baking powder
  • ½ cup butter
  • 1 tsp. baking soda
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. vanilla
  • ½ pint sour cream

    Mix ½ cup sugar, cinnamon and nuts and set aside. Cream butter with remaining cup of sugar and eggs, add vanilla and lemon juice. Sift together dry ingredients and add alternately with sour cream to butter mixture. Pour half the batter into greased 9 X 9" pan, sprinkle with ½ of the topping mixture, drop remaining batter by spoonfuls (it will be thick) to cover topping mixture, then sprinkle remaining topping. Bake at 350-degree for 35 minutes. (I like to make more topping than recipe calls for, using ¾ cup sugar and 1 cup nuts with the one Tbs. of cinnamon).
