• Rhubarb Pie

  • 3 Tbs. flour
  • 2 cups diced rhubarb
  • 1 cup sugar
  • 8" unbaked piecrust
  • 1 egg, beaten

    Combine flour and sugar, add beaten egg and mix well, stir in rhubarb. Pour into unbaked 8" piecrust, top with crumbs; bake in 350-degree oven for 45 minutes or until done. For larger pie, use an additional ½ cup of sugar, another cup of rhubarb, 1 more Tbs. of flour and 1 more egg. Bake 50 to 60 minutes or until done.

    Crumbs: Mix 1 cup of flour with ½ cup of sugar and 1/3 cup of margarine and a dash of salt, cutting with pastry blender or knives until crumbs form.
