Spicy Chicken Burgers with Creamy Horseradish

Makes 4 servings at $1.68 each:

  • 1 pound ground chicken breast
  • ½ cup chopped green onion
  • ¼ cup dry unseasoned bread crumbs
  • 2 tsp. Worcestershire sauce
  • ½ tsp. hot-pepper sauce
  • ¼ tsp. salt
  • 1 egg white
  • 4 lettuce leaves
  • 4 whole-wheat hamburger buns halved and lightly toasted.
  • creamy horseradish (recipe follows)

    Combine chicken, green onion, breadcrumbs, Worcestershire, hot-pepper sauce, salt and egg white in bowl. Form 4 patties, 1 inch thick.
    Coat large nonstick skillet with nonstick cooking spray. Place over medium heat. Add patties; cook, covered, until browned, 5 minutes.
    To serve, spread each bun half with 1 Tsp. creamy horseradish. Make burgers with 1 patty and 1 lettuce leaf each.

    Creamy Horseradish
    Combine 1-cup nonfat sour cream, ¼ cup drained bottled horseradish, 2 Tbs. white-wine vinegar and ¼ tsp. ground black pepper in small bowl. Refrigerate, covered, for up to 3 days.
