SPINACH CHEESE SQUARES
4 Tbs. butter
1 tsp. baking powder
3 eggs
1 lb. sharp cheddar cheese, grated
1 cup flour
1 cup milk
1 teaspoon salt
2 packages frozen chopped spinach,thawed and well-drained but not cooked.
Heat oven to 350 degrees. In a 9 X 13 X 2" pan, melt the butter in the oven; remove from oven and set aside. In bowl, beat the eggs, add flour, milk, salt, and baking powder; mix well. Add cheese and spinach and blend. Pour into buttered pan. Bake 30 minutes. Let stand 10 minutes before cutting into bite size squares. (To freeze for later use: place squares on cookie sheet, when frozen store in tightly sealed plastic bags or containers; reheat in 325-degree oven for 12 min).
