Spinach Rolade (Ellen)
2 10-oz. Pkgs. frozen spinach
4 eggs, separated
½ cup sour cream
1½ cups ground ham
salt & pepper
grated Parmesan cheese
Cook spinach in unsalted water (uncovered pan) over a high flame. Drain, cool, and puree in blender. Mix egg yolks with ¼ cup sour cream, add to spinach. Beat egg whites until stiff, fold into spinach mixture along with ½ cup ground ham. Add salt and pepper to taste. Put foil on an 11 X 15" baking sheet, grease foil (or spray with Pam). Pour mixture onto foil, bake 40 to 45 minutes at 325-degrees. Meanwhile, combine 1-cup ham with ¼ cup sour cream for filling. When spinach is baked, remove from oven and lay out on a kitchen towel. Roll up in the towel, jellyroll fashion. After a few minutes, unroll, spread with ham mixture. Re-roll without towel. Place roll on serving dish, sprinkle generously with Parmesan cheese. Keep warm until ready to serve.
