Strawberry Pie
1 baked 9" pastry shell
3½ Tbs. corn starch
1 cup sugar
½ cup water
whipped cream
few drops of red food coloring
3 pints strawberries (washed and hulled)
Using 1 pint of strawberries (reserve nicest ones for later use) mashed, with sugar, cornstarch and water, make the sauce by cooking over medium heat until mixture comes to a boil, then boil 2 minutes. Remove from heat and add food coloring, cool. Arrange strawberries in baked shell, pour sauce over berries making sure each berry is coated. Chill well before serving. Serve with whipped cream on top. (Another way too make the sauce is to cook the mashed strawberries with water until they boil 2 minutes, remove from heat and put through a sieve. Then return strained liquid to heat with sugar and cornstarch, stir constantly until mixture boils and boil 1 minute remove from heat, add coloring and proceed as above. This makes a clear sauce.)
