Tortellini, Whitebean & Spinach Soup
1 tsp. olive oil.
2 cups chopped onion.
½ cup chopped red pepper
1 tsp. dried Italian seasoning.
3 garlic cloves minced.
2 cups coarsely chopped spinach
1 16-oz. can white northern beans or navy beans drained.
3 - 4 cups veggie broth.
1 14.5-oz. can diced tomatoes.
1 14-oz. can quartered artichoke hearts drained.
1 9-oz. package fresh tortellini (slightly undercooked)
¼ cup fresh grated Parmesan cheese
Heat oil in large pot over med. high heat. Add onion, red pepper, Italian seasoning, & cloves; sauté 5 min. Add spinach, beans, broth, & artichoke; bring to a boil. Reduce heat and simmer 5 min. Add tortellini and cook till done. Sprinkle with Parmesan cheese (serves 6). This is a quick soup. Just emptying all these cans of ingredients and voila a hearty meal in a bowl!
