Tortiere

  • 3 lbs. lean ground pork
  • 4 cups water
  • 1 lb. lean hamburger
  • pinch of cinnamon, cloves
  • 3 or 4 celery tops
  • 6-8 cooked potatoes, mashed fine
  • 2 tsp. salt
  • 2 pastry crusts for 9" pan
  • ½ tsp. pepper

    Put everything but potatoes in saucepan. Bring to boil, simmer until done and cooked down to less than one cup of liquid. Remove from stove. Take out celery tops and discard. Mix in mashed potatoes. Cool. Place in unbaked pastry shell, cover with top crust. (Jeanne says a thinner crust is best). Bake in 450-degree oven for about 30 min. Good hot or cold.
