ZUCCHINE BREAD
3 eggs
2 cups of sugar
1 cup of vegetable oil
1 tsp of vanilla
8 oz. cream cheese
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
½ tsp nutmeg
2 cups walnuts
2 cups shredded zucchini
Beat; eggs, sugar, oil, & vanilla until smooth. Beat in cream cheese. Whisk together; flour, soda, powder, cinnamon, salt, & nutmeg. On low speed, gradually beat into egg mixture. Fold in walnuts & zucchini. Pour into prepared (greased & floured) pans. Bake at 350 degrees for 60 minutes if you use two 9 X 5 pans, or 35 min. for 7 small loaves (5 ¾ X 3 X 2 pans)
