Zucchini Mushroom Tomato Sauce

  • 2 Tbs. olive oil
  • 1 cup chopped fresh tomatoes
  • ½ cup chopped onion
  • ½ tsp. salt
  • 1 cup diced ( ½ inch) trimmed zucchini
  • ¼ cup chopped Italian flat-leaf parsley
  • 1 cup diced trimmed mushrooms
  • 2 Tbs. chopped fresh basil
  • 1 garlic clove, crushed
  • grated Parmesan cheese

    Heat oil in a wide saucepan; add onion; sauté 5 minutes. Stir in zucchini and mushrooms; sauté over high heat, stirring, until tender, about 10 minutes. Stir in garlic; sauté 1 minute. Add tomatoes; cook, stirring 5 minutes. Add salt, parsley, and basil. Toss hot pasta with the sauce and serve at once. Serve with Parmesan cheese, if desired.
