Zucchini Pie

  • 4 eggs
  • 3 cup shredded zucchini
  • 1 small onion chopped
  • ½ cup vegetable oil
  • 1 cup bisquick
  • 1 tsp. marjoram
  • ½ cup Parmesan cheese
  • ½ tsp. salt
  • 1 tsp. parsley flakes
  • 1/8 tsp. pepper
  • 1 cup shredded Swiss/cheddar cheese.

    Mix all ingredients in a bowl, then pour into a 10" pie plate. Bake 45 minutes or longer in a 350-degree oven.
    (I did not use marjoram & in place of bisquick I use: 1 cup of flour, 3 tsp. baking powder, a dash of salt & a little more than ½ cup oil that is called for.)
